Paleo Mexican Layered Casserole

It’s always difficult to come up with new dinner ideas. I feel like I’m always eating the same four or five meals throughout the week. I think this recipe is going to have to be added to the mix though. 🙂 Not only was it fairly easy to make, it tasted amazing! I’m a big fan of Mexican food and this was like a taco in a bowl.

This recipe was adapted from the Virginia is for Hunter Gatherers blog. I changed up some of the ingredients based on what I had in the kitchen. If you want the original recipe you can find it here: http://vahuntergatherers.com/2013/07/10/mexican-layered-casserole-paleo/

Ingredients
1 head of cauliflower, mashed with 1 Tbsp garlic powder
1 sweet potato, hashed
2 tomatos, diced
Spinach and arugula leaves
1 can sliced black olives
1 lb lean ground beef
1 Tbsp chili powder
1/4 tsp garlic powder
1/4 tsp cayenne pepper
1/2 tsp paprika
1/2 Tbsp cumin
1 tsp salt
1 tsp pepper

First, steam your cauliflower until it’s soft and mash it with the garlic powder. Next, grate your sweet potato.

Fillings

Cook and season your ground beef. While doing that you can saute your sweet potato in a greased pan of coconut oil (or olive oil). Saute until tender. Prep olives, tomatoes, and spinach into diced pieces.

Assemble your ingredients into a serving platter like this: meat, cauliflower, sweet potato, spinach, black olives, and tomato.
