Breakfast and dinner ideas galore

Hello, hello- it’s been awhile! My lack of blogging does come with an excuse though…we got our puppy, Butterscotch! We’ve had him for three weeks now. He was quite a handful the first couple of weeks, more so than we expected, but he’s absolutely adorable and we love him so much.

This was all three of us on the day we took him home. He was 7 weeks old.

Having a puppy has really taught me how to live in the present. I’m actually incredibly thankful for this as I was spending so much time worrying about everything that could happen in the future (What’s in store for me with my new job? Will Kevin and I decide to move again in the next few years? Etc…). Butterscotch has literally pulled me back into the present. My focus has shifted to taking care of him and trying to juggle cooking and house-hold tasks without him chewing or eating something he shouldn’t. He’s like a little baby that needs constant supervision. But I love the little guy. Kevin and I are also spending more time outside being active. We take him on nightly walks and to the dog parks on the weekend. What better way to make the most of this beautiful summer weather? 🙂

So that’s the reason for the lack of blogs lately. I’ve still kept up my primarily Paleo and gluten-free diet though! No soda, bread, or fast-food (McDonalds, Culvers, etc…) since December 2012. I have had “fast food” at Qdoba and Chipotle  but I stick to a chicken salad or rice-less “burrito” bowl.

I have some notable meals from the past few weeks that I’d like to share. Some of these are variations of meals I’ve posted about in the past, but they’re worth another post because they’re so easy and delicious.

So you know how I’m obsessed with breakfast? My breakfasts aren’t always 100% healthy, but they are generally gluten-free with a side of fruits or veggies.

Here’s breakfast #1. I made gluten-free pancakes using Pamela’s pancake mix. These are not Paleo because they do contain rice, potato, and buttermilk. I try to eat these as if they’re a treat. I don’t think they should be a diet-staple, but they’re a quick and easy alternative when you just need a good pancake. Don’t get me wrong, I still love my Paleo pancakes, but coconut flour is quite expensive, so I try to alternate to save some money. 🙂

Here’s the full list of pancake mix ingredients: 
Brown Rice Flour, White Rice Flour, Cultured Buttermilk, Natural Almond Meal (may appear as brown flecks), Tapioca Starch, Sweet Rice Flour, Potato Starch, Grainless & Aluminum Free Baking Powder (Sodium Bicarbonate, Sodium Acid Pyrophosphate, Potato Starch), Baking Soda, Sea Salt, Xanthan Gum.

Also, the ham in this picture is nitrate and preservative-free. There’s nothing I dislike more than meat that is packed with chemicals to extend the shelf-life and preserve the meat color and flavor. Watch out for packaged meats that contain chemicals like monosodium glutamate (MSG), butylated hydroxyanisole (BHA),and sodium benzoate.

Breakfast #2 is heavenly good because of the chocolate almond butter that I recently found at Whole Foods. This is definitely a once-in-awhile treat because of the cane sugar content, but it tastes amazing, especially when put on pancakes. 🙂

Here are the almond butter ingredients: Dry roasted almonds, organic cane sugar, organic cocoa, organic cocoa butter, palm fruit oil, vanilla, and sea salt.

And here are a few recent dinners. Dinner #1 is chicken sausage with sweet potatoes, sliced pepper, onion, and mustard. I also threw in a side of blackberries and sliced mango. And the can at the top of the picture is unsweetened carbonated water, a good soda alternative when you want something bubbly. 🙂

Dinner #2 is chicken sausage on top of cauliflower-rice, steamed broccoli, and oranges.

And this is a fantastic, refreshing side to add to any summer meal: sweet kale salad! It’s just fresh kale tossed in olive oil, honey, balsamic vinegar and orange juice. Add in some additional things like almond slices, pine nuts, cranberries, slivers of apple, and shallots and you’re all set.
